Recipes:

– Yummy Salad Meal –

Wash, dry and cut any of the following:

  • Green or Red Curly Kale
  • Lacinato Kale
  • Collard Greens
  • Swiss Chard
  • Beet Greens
  • Green or Red Leaf Lettuce
  • Romaine Lettuce
  • Spinach

Add any or all of the following:

  • chopped Buckwheat or Sunflower Greens
  • Grated Carrots, Zucchini, Squash, Beets
  • Sliced Cucumbers, Tomatoes, Green Pepper, Mushroom
  • Chopped Broccoli, Cauliflower, Jicima, Avocado

Toss all together and serve with Lemon Tahini and/or Poppyseed Dressing (Recipes Below).

 

Dressings:

– Lemon Tahini Dressing or Dip-

Using a Vita-Mix or equivalent Blender, fill the blender to the top of the blades with:

  • Brown Sesame Seeds (optional: you can soak them overnight then dehydrate them)

Blend the seeds to cornmeal consistency.

Leave the blender on the lowest setting and add:

  • 1 Cup Cold Pressed Oil (Sunflower Oil is my favorite)
  • Juice of 1 1/2 Lemons
  • 1/4 Cup Nama Shoyu (to taste, can add more as you go)
  • a few dashes of black pepper
Bring the speed of the blender up as you add:
  • 7-8 stalks Celery, chopped (use the stalks without leaves to keep the mixture thick)
  • 1/4 large Yellow Onion
  • 1/2 Green or Red Pepper
  • (optional) Add 2 drops each of Lemon and Citrus Bliss doTERRA Essential Oils

Blend on high until smooth. Stores in the fridge for 5-7 days

– Poppyseed Dressing  –

The Secret to AMAZING Poppyseed dressing is to make it right after you’ve made the Lemon Tahini Dressing (above) and you DON’T RINSE OUT THE BLENDER!! Then the goodness of the Lemon Tahini will add to the goodness of the Poppyseed :)

Using a Vita-Mix or equivalent blender add:

  • 1 Cup Cold-Pressed Oil (Sunflower Oil is my favorite)
  • 1/2 Cup Raw Apple Cider Vinegar
  • 1/4 Cup Honey or Agave
  • 1/4 large Yellow Onion
  • 5 stalks Celery (use the stalks with the leaves for a more light and frothy blend)
  • 2 TBS Mustard of your Choice

Blend on high until smooth. Once smooth, turn speed to low and add:

  • 1/2 tsp Poppyseeds

Stores in the fridge for 5-7 days
